Be kind to yourself and your environment - delicious, easy, vegetarian recipes for more greens on your plate.

A potato can do so much more than mash. In more than 800 simple recipes, "Young Vegetables" provides more variety in green cuisine. Here, carrots are swapped for aubergine with mint, garlic and pine nuts faster than you can say "kale". Separate chapters on the different vegetables suggest original preparation methods and combinations. A book for vegetable fans - and all those who want to become one.

Young Vegetables introduces more than 40 types of vegetables and explains when they are in season, how best to store them and what ingredients they work well with.
